Responsibilities
The primary job of the Lead Pastry Chef is to produce and pack out according to menu specifications. This includes but is not limited to:

  • Manage Pastry Production: Lead the preparation of a wide range of baked goods, including cakes, cookies, pies, and bread, using both traditional and modern recipes to maintain the highest quality standards.
  • Menu Development & Collaboration: Work closely with the executive chef, sales, and marketing teams to design dynamic, seasonal menus that reflect the brand and excite clients. Create innovative, health-conscious, and dietary-friendly dessert options to keep offerings fresh and enticing.
  • Pastry Order Fulfillment: Manage the execution of pastry and dessert orders for client events and company-sponsored marketing initiatives.
  • Pastry Skills & Techniques: Display expertise in crafting a wide variety of pastries, desserts, cakes, cookies, and pies, with a focus on both traditional recipes and alternative, healthier baking methods.
  • Leadership & Staff Development: Oversee, train, and support pastry staff and other team members with pastry-related duties. Ensure that the entire team is well-versed in both traditional techniques and alternative methods of baking.
  • Pastry Decoration & Visual Appeal: Use various icings, toppings, and decorating techniques to create visually stunning pastries that capture the attention and excitement of customers.
  • Compliance with Health & Safety Standards: Ensure full compliance with all food industry regulations, maintaining strict hygiene, sanitation, and safety protocols within the pastry department.
  • Maintenance of Equipment: Regularly inspect, clean, and maintain pastry tools and equipment, ensuring everything is in top condition and operational to support production.
  • Bulk Production Management: Track and manage inventory levels of key baking production items based on Sales volume and seasonality.
  • Collaborative Kitchen Support: Work alongside other kitchen departments as necessary, contributing to an efficient, cohesive workflow and ensuring all operations run smoothly.

Qualifications

Requirements

  • Minimum of 3 years' experience in a high-volume restaurant or catering company
  • Flexibility in daily schedule - Early mornings or evenings required
  • Flexibility in weekly schedule – some weekends required particularly in busy seasons
  • Proficiency in both classical and traditional baking techniques and proficient in finishing work
  • Menu development experiencing including scaling recipes
  • Strong communication skills
  • Ability to lift 50 pounds and stand for 8 hours at a time
