Responsibilities:
- Responsible for all Banquet production, execution, presentation, and service.
- Assists Executive Chef in recruitment and training culinary personnel, quality control of Banquets, Employee Cafeteria, and menu planning.
- Responsible for preparation of all food for Banquet functions and employee cafeteria.
- Helps with running of a la carte line for Fairview, Room Service and Bull Durham.
- Oversees labor in kitchen.
- Maintains kitchen sanitation.
- Follows established kitchen procedures.
- Helps oversee stewarding department.
- Acts in the capacity of Sous Chef or Executive Chef in their absences.
