SUMMARY  

Assist the F&B Director managing and coordinating all food & Beverage departments according to hotel policies, Forbes Standards and professional guidelines. Assist in implementing all hotel policies.  Monitor very closely food cost, beverage cost, payroll and other expenses.  Establish prices and menus for each F&B outlet, based on profitability and local competition.  Hiring, promotion, coaching and training of all Food and Beverage employees. 

ESSENTIAL DUTIES AND RESPONSIBILITIES

  • Maintain a professional atmosphere throughout the Food and Beverage Division.
  • Complete knowledge of every F&B related subject in a first-class property.  Past experience in several F&B Departments, as well as other Divisions.
  • Manage budgets, forecasts, and financial reports to optimize profitability.
  • Monitor F&B costs, labor expenses, and inventory to ensure financial efficiency.
  • Identify opportunities for revenue growth and implement innovative strategies to enhance sales and guest satisfaction.
  • Oversee the daily operations of all F&B outlets, including restaurants, bars, in-room dining, and banquet services.
  • Ensure a personalized and seamless dining experience for guests.
  • Handle guest inquiries, feedback, and complaints professionally and efficiently.
  • Ensure compliance with health and safety regulations, hygiene standards, and licensing laws.
  • Implement and maintain high service standards, ensuring an exceptional guest experience.
  • Work closely with the culinary team to create and refine menus that align with guest preferences and industry trends.
  • Develop and enforce standard operating procedures (SOPs) for F&B operations.
  • Forecast, implement, monitor, control and report on the various outlet budgets and their components (labor costs, food costs, beverage costs, supplies, equipment, etc...) to maximize revenue and minimize expenses while ensuring adequate supplies and staff are on hand to provide top quality customer service.
  • Food and Beverage Control and Food and Beverage Purchasing
  • Create, recommend and implement promotions, displays, buffet presentations and ideas to capture more in house guests and a larger share of the local market.
  • Foster a culture of teamwork, excellence, and continuous improvement.
  • Conduct regular performance evaluations and provide coaching and development plans for team members.
  • Recruit, onboard, and retain top F&B talent to maintain high service standards.
  • Ensures efficient operation of departments; staffing, training, scheduling of team members
  • Attend daily morning standup meetings and any other Management meetings as scheduled
  • Strong Forbes Team Training and Accountability.
  • Be diplomatic, strict and fair in his/her relationship with all hotel staff.  Work weekends and holidays.
  • Other duties and responsibilities may be assigned.  The employee is expected to work in other areas of the hotel when needed to assist operations to perform job duties not necessarily contained in this job description.

Qualifications

EDUCATION / EXPERIENCE

  • Bachelor’s degree (B.A.) from four-year college or university; with past experience in hotel and food industry, knowledge of food products, cooking, baking, wine and alcoholic beverages; or equivalent combination of education and experience.
  • Five to seven years progressive Food & Beverage management experience in a luxury hotel
  • Able to work well with a progressive company that believes in strong guest satisfaction and equal emphasis on financial goals.
  • Ability to work flexible schedule to include evening, weekends and holidays
  • Must have skills in inventory control and labor cost control.

    • Must read, write and speak the English language fluently
    • Knowledge of Spanish helpful
  • Computer skills

                          Strong Microsoft Office skills with emphasis on Excel
