Executive Sushi Chef

SUMMARY

The Executive Sushi Chef is responsible for all Hotel Sushi operations including restaurants, in room dining, and outlets when needed. This role is responsible for establishing and maintaining standards of food quality and presentation; designing, costing and implementing appropriate menus; ensure a high level of cleanliness throughout the kitchen. 

ESSENTIAL DUTIES AND RESPONSIBILITIES

• Collaborate with the Culinary leadership team on a diverse, seasonal, and innovative sushi menu that caters to various dietary preferences.
• Write, cost and implement effective menus
• Manage budgeting food cost
• Manage sushi ingredient inventory levels; place orders as needed to prevent shortages. Source premium seafood and ingredients to ensure freshness, optimal flavor, and exceptional presentation.
• Control ordering and requisitioning of food products to achieve maximum profitability
• Create recipes and establish production methods and standards
• Ensure that standards of presentation are maintained
• Maintain equipment and schedule maintenance as needed
• Maintain an up-to-date knowledge of local and international market trends and competitors’ offerings to create food products which satisfy guests’ needs
• Conduct monthly F&B inventories
• Must help process F&B invoices. 
• Other duties and responsibilities may be assigned. The employee is expected to work in other areas of the property when needed to assist operations to perform job duties not necessarily contained in this job description

EDUCATION / EXPERIENCE

• 8 years progressive culinary and management experience
• Proven experience as a Sushi Chef or similar role in the food service industry.
• Excellent knife skills and ability to work efficiently under pressure in a fast-paced environment.
