Summary: The Production Distiller position is a fantastic opportunity to practice the art of producing craft whiskey with the award-winning team at Wigle Whiskey. We are looking for an experienced candidate that is positive, self-motivated, detail oriented, and who understands and values teamwork. Candidates must be willing to work early mornings, late nights, and weekends and be comfortable in a manufacturing environment.  If you love distilled spirits and hands-on work, this is the job for you! 

Essential Duties and Responsibilities as Production Distiller include the following:

  • Mashing and Milling Grains to start the Production Cycle 

    • Bucket grain according to requirements for the mash 

    • Follow recipe to cook milled grain with appropriate enzyme doses and temperature holds

    • Pitch yeast to begin fermentation

    • Set up hoses/pumps to transfer complete mash from mashtun to fermentation tank 

  • Distilling Spirits 

    • Produce spirits including Whiskey, Rum, Gin, Brandy, and more 

    • Plumb the stills according to the production schedule 

    • Make appropriate cuts according to internal standards 

    • Clean and sanitize stills between charges or as needed

  • Barreling Whiskey 

    • Transfering new make spirit into scale for dilution

    • Hydrate and stencil barrels

    • Fill barrels according to internal specifications 

  • Processing whiskey and spirits into ready-to-bottle products

    • Harvesting whiskey and spirits from tanks and barrels

    • Accurately gauging proof, volume, and weight of whiskey and spirits using equipment on site (including hydrometers, thermometers, graduated cylinders, a scale, and more) 

    • Filtering whiskey and spirits through a plate-and-frame filter

    • Bottling whiskey and spirits

  • Tank Cleaning/Sanitation 

    • Follow established Standard Operating Procedures to safely and effectively clean tanks after use 

      • This may include sanitation using caustic soda and/or citric acid

  • Digital Record Management

    • Record relevant data from production operations into Whiskey Systems and/or Google Account

Qualifications

Minimum of 1 year of experience in alcohol manufacturing (Preferably Distilling)  

Driver’s License 

Familiarity with MS Excel and Google Sheets

Comfort Driving Box Truck (Preferred)

Forklift Experience (Preferred)
